I'm an administrator at a small, family-run café, and we've run into a problem with our main workhorse: the German Knife GS-12M slicer. Recently, it has started making a strange, metallic grinding noise while running, and the slices have been coming out unevenly, as if the blade were catching on the housing. Our chef tried adjusting the blade himself, but we lost some small bolts and didn't solve the problem. Now, the machine is half-disassembled, and we can’t figure out how to reassemble it so that nothing gets jammed during peak usage.</p>

Last summer, I helped my dad at his small meat processing plant in New Jersey. The carriage also jammed on a similar German knife. We almost took the entire mechanism apart. In a panic, I started looking for what it was supposed to look like originally. Luckily, I found <a href="https://manualmachine.com/germanknife/gs12m/5171937-parts-diagram/" target="_blank" rel="noopener noreferrer nofollow ugc">manualmachine.com</a> , which has a detailed online library of disassembly diagrams specifically for the GS-12M. I found a detailed cross-section diagram of the entire knife assembly, and within half an hour, we figured out where the spring had fallen out and was blocking the movement. Did you remove the blade with a special puller or just by hand, by the way?</p>

I’m afraid of ordering the wrong part and wasting money, so I’m looking for the most accurate specifications for the GS-12M model.</p>
